Mexican Lasagna

Ok, the ingredients are not in the order I meant them to
be when I typed them, so hopefully it doesn't throw you off.
I hope you enjoy Mexican Lasagna. It's easy to make, healthy,
and colorful!! I'm lovin' this blog thing, so keep the recipes coming.

1 1/2 lbs. ground beef
2 cups small curd cottage cheese
1 1/2 tsp. ground cumin
1 cup grated Monterey Jack cheese
1 Tbsp. chili powder
1 egg
1/4 tsp. garlic powder
1/2 cup grated cheddar cheese
1/4 tsp. red pepper
2 cups shredded lettuce
1 tsp. each salt and pepper
1/2 cup chopped tomatoes
1 (16 oz.) can chopped tomatoes
3 green onions, chopped
10-12 corn tortillas
1/4 cup sliced olives

Brown ground beef; drain and rinse thoroughly. Add cumin, chili powder,
red pepper, salt, pepper and tomatoes; heat through. Cover bottom and
sides of a greased 13"x9"x2" baking dish with tortillas. Pour beef mixture
over tortillas; place a layer of tortillas over meat mixture and set aside.
Combine cottage cheese, Monterey Jack cheese, and egg; pour over tortillas.
Bake at 350 for 30 minutes. Remove from oven; sprinkle rows of cheddar
cheese, lettuce, tomatoes, green onions and olives diagonally across center
of casserole.
