Garlic Red Potatoes

So a while back Blake and I ran out of Gary's potatoes! Sad day! So, we decided to try red potatoes. I remember eating them at the house before, and they were so yummy! I see recipes with them and always want to try them. So, today I decided to make them with our roast. I really liked them, and ate all of them (not joking)... Blake was not a big fan. He couldn't decide if it was because I didn't cook them long enough, or if he didn't like the garlic flavor. I think his verdict was that I didn't cook them long enough, because he would lick the flavor of the garlic, then take a bite and lick just the potatoe, and he said that it was just the potatoe he didn't like.... oopps! Next time I will do better. Like I said, I am only a wanna be cook!

This got way good reviews and I really liked them, so i'm posting the recipe even though Blake was not a fan. I know that you guys will cook them better anyway!

Ingredients

2 pounds red potatoes, quartered
1/4 cup melted butter
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced (I used 2-3 TBSPs lemon juice)
parmessan cheese

Preheat oven to 350 degrees. Place potatoes in 8x8 baking dish. In a bowl combine butter, garlic, salt, and lemon juice. Pour over potatoes, and stir to coat. Sprinkle cheese over potatoes. Bake covered for 30 minutes, and then uncovered for another 10, or until golden brown. (Or cooked! :) )


T's Favorite Roast

When Blake and I first got married I found a recipe for cooking our Sunday Roast; I have used it ever since. We like our roast falling apart. It is delicious! Also, so easy!

Roast

I should've taken a picture before I took it out of my Crockpot, because it is impossible to get it out without it falling apart.

Ingredients

Roast (we like the sorloin tip roast)
2 cups water
1 package brown gravy mix
1 onion soup mix

Place roast in Crockpot. (I usually just take my roast out of the freezer, or the fridge if I remembered to put it in there the day before. I don't brown it or anything though.) In separate bowl add water, the package of brown gravy, and onion soup mix. Mix those ingredients. Pour on top of roast. Cook on high for 6 hours, or low for about 8 hours. So yummy!

You can also make gravy out of the drippings and mixes that are left in the Crockpot. I attempt everytime.. sometimes it works out okay, and sometimes it does not... at all! So if you figure out how to make gravy with the mixture in the Crockpot.. let me know! :)

Breakfast Burritos

Blake's request Saturday morning was breakfast burritos! We are trying to eat all the food we have in this house before we leave in 11 days!! :) So we got to use some of our sausage, eggs, bacon, and tortillas.

BREAKFAST BURRITOS

Ingredients

Eggs
Sausage
Bacon
Cheese
Tortillas
Ketchup or Salsa
Etc. :)

I just cook the bacon, sausage, and eggs. Then add cheese to the eggs. Cook the tortillas (or if you have pre-cooked than you can warm those up, or eat it cold.) Fill them with everything, and then add ketchup or salsa over top. You could add more things like: hashbrowns, peppers, etc. Make it how you like it! :)

Cereal Bars

I've decided that I'm just a wanna-be cook. Ha, my food and treats never quite turn out the right way. Blake's mom, Angie, is a very good cook and makes the best cereal bars! I know this because she sent some home with us on our way back to Washington one time, and I ate almost all of them! They are delicious! Mine don't look us pretty as hers though! :( My m&m's melted while I was stirring the ingredients, so you can no longer tell that there was m&m's in them. Shoot! I will try to get better at that! I made these for Blake, Matt, and Andrew also. I was scared that I wouldn't have enough treats for them, but they are hardly touching the treats! I hope it's just because they are just not hungry, and not because they turned out bad!

Cereal Bars


Ingredients

4 cups cherrios (any kind works)
2 cups rice krispies
1 cup dry roasted peanuts
1 cup m&m's
1 cup corn syrup
1 cup sugar
1 tbsp vanilla
1/4 cup peanut butter

Mix cherrios, rice krispies, peanuts, and m&m's in bowl and set aside. Boil sugar and corn syrup until sugar dissolves, then remove from heat. Add vanilla and peanut butter to boiled mixture until smooth. Stir liquid mixture into the dry mixture until evenly coated. Spread in a 13x9 baking dish. Let cool, then serve! Yum!

Chocolate Covered Rice Krispies

We love chocolate covered rice krispies; they are a family favorite! So addicting though, so watch out!
I made these for Blake, Matt Hansen, and Andrew Pena this weekend. They are here to play basketball with Blake's team and staying with us. I just needed to make a treat to set out for them to eat.

Chocolate Covered Rice Krispies



Ingredients

6 cups Rice Krispies
1 cup sugar
1 cup karo syrup light
1 cube butter (1/2 butter)
1 cup peanut butter
1 11oz. bag butterscotch chips
1 11oz. bag milk chocolate chips

Put the rice krispies in bowl and set aside. Boil sugar, karo syrup, and butter. Remove from heat and add 1 cup peanut butter to the boiled mixture, and stir until it melts. Pour boiled mixture over rice krispies. Mix together and press into greased cookie sheet. Microwave butterscotch chips and chocolate chips in microwave until melted. Spread over rice krispies. Allow to cool. Cut and serve. 

Taco Soup

I love Taco Soup; I wish Blake also loved it, but he is not a huge fan. It is very quick and easy to make!

Taco Soup



Ingredients

1/2 - 1 lb. of ground beef
1 small chopped onion
1 28 oz. can tomatoes, slightly blended
1 15 oz. can kidney beans, undrained
1 17 oz. can whole kernel corn, undrained
2 to 3 TBSPs taco seasoning mix
2 cups

Brown the beef and onion. Drain well. Add remaining ingredients. Simmer 15 minutes. Serve. Add cheese and tortilla chips to top it off.

Chicken, Rolls and Salad


Crispy Coconut Chicken Tenders
(from Best Bites Cookbook)
1 c. coconut flakes
1 cup Panko Bread Crumbs
1 1/2 tsp. garlic powder
3/4 tsp salt
3/4 tsp. curry powder
1/4 tsp. onion powder
1/8 tsp cayenne pepper (optional)
1/2 c. flour
2 eggs
12 chicken tenders

Preheat oven to 450. Spray foil lined pan with cooking spray
chop coconut into smaller pieces
combine coconut, bread crumbs and spices in shallow dish. mix well.
place flour in shallow dish and whisked eggs in another separate dish.
Dredge chicken tender in flour, shake off excess, then in egg, then in bread crumb mix.
place on pan.
Bake for 20 minutes for a medium sized chicken tender. ( 15 for small, 25 for larger)
The juices will run clear when done and the bread crumbs are lightly golden brown and toasty.





Apricot/ Pineapple dip
Whisk 1 cup apricot-pineapple preserves
2 teaspoons soy sauce
1/2 tsp Dijon mustard
1/8 tsp curry




I liked the coconutty coating. I left out the curry and cayenne because Dad didn't want them.
They were good but probably have a little more kick with those spices added.
I made the dip too. I liked it but Dad wasn't thrilled about it.


Carly's and Moms...Potato Roll Recipe

The thing I like about this is you just throw everything in your mixer, mix it for 3 or 4 minutes and it raises (2 or 3 hours). I punch it down and form rolls, they raise and I bake them and they are Yummy!
They always turn out great!

4 1/2 c. flour
1 c. mashed potato flakes
3 Tbsp. sugar
2 tsp. salt
2 pkg. yeast or 3 tsp. from a bulk package
2 cups warm milk
1/2 c. melted butter
2 whisked eggs

Pour it all in, be careful that your milk is not too hot (to fry the eggs ).
Mix it well and let rise until doubled. YOu Can... punch it down and let it rise twice.
Then form the rolls on a greased or sprayed pan. Closer together makes them got up,
further apart makes them go out more.
Bake at 350 for 10 to 12 minutes. I watch them and peek at the bottom to make sure they're golden brown. Butter the tops with good real butter when you take them out of the oven.
mmmm.... eat warm if possible.... with mom's raspberry jam, if possible... :)








Mandarin Orage Jello Salad


Tyler Barton told me how to make this....

1 med/large cool whip
1 med. cottage cheese
1 small orange jello
3 drained cans of mandarin oranges

Stir and refridgerate and eat. Super easy.
Dad loved it! He actually came home from work at 11:30 in the morning because he said
"I was craving your jello and wanted to take some to work for my lunch!"
That was a good compliment. Love you Rexy!

Stroganoff

When I think of stroganoff it takes me back to our old ward (before it got split). I just remember going to those great Halloween parties in the cellars. I remember having baked potatoes and stroganoff! Yum!

I was trying to find a good stroganoff recipe on the internet yesterday, and it was very hard to find one without mushrooms, because Blake is not a big fan. I finally found one that doesn't have mushrooms. So, if you don't like mushrooms here's a good stroganoff recipe. The recipe is from Sharee Barton, one of our good family friends. She made me this cute little recipe book for my bridal shower. So thanks Sharee! :)

Stroganoff


 (This is Blake's plate full of food. I dished him up; he actually finished it!)

Ingredients:

1 pound hamburger
1/2 cup onion
1/2 tsp garlic salt
3 tbsp flour
2 beef boulin cubes
1 tsp salt
1/2 tsp pepper
2 cups water
1 1/2 cups sour cream

Brown the hamburger, onion, and garlic salt in frying pan. Then add the rest of the ingredients. Simmer until it is warm throughout. Serve over cooked noodles or baked potato.

Banana Drop Cookies



One of my best friends, Shari, gave me this recipe and it has become a family favorite!!

Ingredients:
1 cup soft shortening
1 cup sugar
2 eggs
1 cup mashed bananas (about 2)
1/2 cup buttermilk (or 1/2 Tbsp lemon juice or vinegar added to enough milk to add up to 1/2 cup will make a good substitute for buttermilk).
1 tsp. vanilla
1 1/2 tsp. soda
1/2 tsp. salt
3 cups flour
1 cup chopped walnuts (optional)

Directions:
Cream shortening, sugar, and eggs.
Stir in bananas, buttermilk, and vanilla.
Measure flour and blend in soda and salt
to the flour. Stir into creamed mixture.
Blend in nuts. Chill one hour in fridge.

Heat oven to 370F. Drop rounded spoonfuls
2 inches apart onto lightly greased baking sheet.
Bake 10 to 12 minutes.

Frosting: 1/3 cup soft butter or margarine
3 cups powdered sugar
1 1/2 tsp. vanilla
about 2 Tbsp. milk

Blend butter and sugar. Stir in vanilla and milk.
Beat until smooth.

***This recipe makes alot, so I always half it.

Cake Mix Cookies

I promised my little dancers a treat a couple weeks ago, because they were actually quite good that day! :) They are adorable, but it is rare that they are ever quiet and listen to their teachers! So after a couple weeks of forgetting and getting reminded, I finally remembered to bring them their treats. So I have a hard time deciding what to do for their treats when I bring them, because I have some girls that are allergic to strawberries (yeah not so bad right?) But then also, peanut butter and chocolate! I feel so bad for the pour girls that can't eat peanut butter or chocolate! I have brought everything from sugar cookies to cupcakes to pumpkin bars. Those all take more than an hour to make, and because I remembered this treat I needed to bring about an hour before I had to go, I was desperate. So, I had the brilliant idea of cake mix cookies!! :) They never fail me in my limited time of need. So simple. Thank goodness I had a confetti cake mix! (no chocolate, peanut butter, and I hope no strawberry flavorings! :/ )

My little dancers loved them! They are so cute and thought they were "The Best Cookies!" Ha, little do they know that they are from a mix! :)


Ingredients

1 box of any cake mix
1/2 cup oil
2 eggs

Mix and drop onto greased baking sheet. Bake at 350 degrees for 7-11 minutes (depending on the size of balls you make).

Steak Marinade

I didn't want to make the usually Sunday dinner this past week, so Blake was pleased with the idea of having steaks! :) I found a marinade recipe that was quite good! We had twice baked potatoes and corn on the cob with the steaks and it ended up to be a good Sunday meal! :)


Steak Marinade 


Ingredients

1 tbsp olive oil
1 tbsp worcestershire sauce
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp yellow mustard
1 garlic clove, minced
pepper

Mix all ingredients and place steaks into freezer bag in fridge over night. (I put mine in the fridge Sunday morning at 9 and put them on the heat at 4... so about 7 hours)

(I doubled this recipe and put in 4 steaks with the marinade.)

Cook steaks on low to medium low heat.

Oatmeal Chocolate Chip Cookies

I've been missing this blog!! Our laptop got a dang virus on it last Wednesday and has been getting fixed for the last week! It has been interesting in our apartment without cable and internet. We do have the I-touch though! One night (Friday) Blake and I were just on the couch (while most people were out on datings, but I am way too cheap to go spend money) we were talking about how people ever lived without the internet and cable. It was pretty hard for those few days, but also quite nice to be able to just relax and talk with Blake without a 5 minute pause before one of my questions being answered, because of the distraction of the internet. :)

To my point though, I have a lot of catching up to do on here! :)

I'll start with the oatmeal cookies. Blake requested this treat the other night, because they are his favorite. I always like to try new recipes for these cookies, because I want to find a perfect one that Blake LOVES! :) This one is so far the winner!

OATMEAL CHOCOLATE CHIP COOKIES 



Ingredients

1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 cups oatmeal
2 cups chocolate chips

Mix sugars, butter, eggs, and vanilla together. Then add and mix flour, baking soda, baking powder, and salt to the mixture. Then stir in oatmeal and chocolate chips. Bake @ 375 for 8-12 minutes.

Cinnamon Roll Sugar Cookies

I got bored on Saturday so I felt like baking! (Probably not good for my wedding diet.. that I am supposed to be on!) I found this yummy recipe and decided to try it out!!


2 Cups sugar
1 Cup butter, softened
3 eggs
1 teaspoon vanilla
1 Cup sour cream
6 Cups flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon salt
12 tablespoons softened butter, (slice 2 Tablespoons 6 times totaling 12 tablespoons)
1 1/2 Cups packed light brown sugar, divided into 1/4 Cups
1 1/2 Tablespoons ground cinnamon, divided
Frosting
8 oz softened cream cheese
1/2 Cup powdered sugar
2-4 Tablespoons milk, to thin icing
1. In an electric or stand mixer, cream the sugar and butter. Add eggs, vanilla and sour cream until well combined. Slowly add in the flour, baking soda, baking powder and salt until well combined.
2. In 2 batches, place in plastic wrap in a disc shape and chill for at least 2 hours for best results.
3. Once chilled, cut each disc into thirds and roll into a 1/8 inch thick oval, about 12 inches X 5 inches.  Spread each rolled pieces of dough with 2 Tablespoons softened butter, 1/4 Cup packed brown sugar and 1/4 teaspoon cinnamon.  Start rolling from the long end closest to you, rolling into a log shape.  Using a sharp knife, cut 1/2 inch pieces of dough then placing onto a silpat or parchment lined baking sheet.  Bake at 350 degrees for 9-11 minutes. Remove and let cool for 5 minutes before removing from baking sheet.
4.  To prepare frosting, beat the cream cheese until softened and smooth, slowly add powdered sugar and milk until desired consistency.  Frost cookies then place in refrigerator until ready to serve.  



I didn't feel like making the dough so I just used the store bought sugar cookie dough already chilled! I'm sure if I made it then the cookies would have been even tastier! So once you have your dough rub the butter all over it.

Then sprinkle some brown sugar over that! ( I didn't really measure anything.. I just kinda threw it all on there)

Then sprinkle some cinnamon on that

Roll your dough (Be careful with this, it is harder than it looks!)

Belgian Waffles


Not the most flattering picture of me, but mom insists that we include ourselves in the pictures haha. And yes, we had breakfast for Sunday dinner.

Belgian Waffles (also known as Melanie's famous waffles). This recipe was given to me from Carly and it was given to Carly from her friend Melanie.


2 cups flour
2 heaping Tbsp. sugar
1 Tbsp. baking powder
1 tsp salt
2 1/2 cups milk
2 yellow egg yolks
stir with fork

In a separate bowl beat until fluffy white:
2 egg whites
2 Tbsp. oil

Fold into above mixture.
Pour onto waffle griddle and enjoy!!

Beef and Broccoli

I told my mom I would post this recipe of Beef and Broccoli so here it is. It is super easy and yummy! We eat it with rice instead of noodles.

Beef, Baby Broccoli and Wild Mushrooms


Dinner’s on the table in just 25 minutes! This low-fat, super-quick recipe’s a keeper!
Prep Time 15 Minutes
Total Time 25 Minutes
Makes 4 servings

1 pound beef boneless sirloin steak
2 garlic cloves, finely chopped
8 ounces baby broccoli or broccoli, cut into flowerets and stems cut into 1-inch pieces
3/4 cup Progresso® beef flavored broth (from 32-ounce carton)
1 package (8 ounces) fresh shiitake mushrooms, cut into fourths (3 cups)
6 ounces fresh crimini mushrooms, sliced (2 cups)
2 tablespoons dry sherry or apple juice
1 tablespoon soy sauce
1 teaspoon cornstarch
1 package (10 ounces) curly Chinese or Japanese noodles

Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add beef and garlic; stir-fry 4 to 5 minutes or until beef is brown. Remove from skillet.
Add broccoli and 1/2 cup of the broth to skillet. Heat to boiling; reduce heat to medium. Cover and cook about 2 minutes or until broccoli is crisp-tender. Add mushrooms, sherry and soy sauce. Cover and cook 2 to 3 minutes, stirring occasionally, until mushrooms are tender.
Stir in beef. Mix cornstarch and remaining 1/4 cup broth; stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute.
Meanwhile, cook and drain noodles as directed on package. Divide noodles among bowls. Top with beef mixture.
Makes 4 servings

Beefy Corn Chip Casserole

Beefy Corn Chip Casserole (the name is not really great, but it still tastes good)
Jimmy is always asking me to make him cheesy casseroles so I finally did it! It wasn't my favorite because of all the cheese, but he loved it so maybe you will too! I got it from my friend in Omaha who is a great cook. Sorry I don't have an cool pics like Tiara!

1 lbs ground beef
1/2 cup chopped onion
1/2 tsp garlic salt
2 small cans of tomato sauce
1 cup chopped sliced olives
1 cup sour cream
1 cup small curd cottage cheese
1 can chopped green chili peppers
10 oz crushed corn chips
2 cups grated monterey Jack cheese

Fry beef , add onions garlic slat, tomato sauce and olives and set aside

Combine sour bream, cottage cheese, and chopped green chili peppers. Place half of the crushed chips on the bottom of a casserole dish. Add 1/2 meat mixture and sprinkle with 1 cup of cheese. Spread sour cream mixture evenly over casserole. Repeat first two layers. End with cheese on top. Bake covered at 350 degrees for 1 hour and 15 minutes

Beef Enchiladas

One of my favorite food blogs to go to (besides our's of course) is a blog called the sister's cafe. I have been wanting to make enchiladas with the red sauce anyways I did last night and loved them. I didn't use a roast though I just used hamburger because I didn't look at the recipe until 4:00 p.m. and Jimmy was coming home at 5:30.

Jen’s Frozen Beef Enchiladas

1 eye of round roast

1-2 cans Red Enchilada Sauce, depending on how big the roast was
1 1/2 cups shredded cheese (estimate)
1 can diced green chilies
tortillas (about 15)
1additional can red enchilada sauce (use when ready to cook)
additional shredded cheese

Leave the roast in crock pot all day with a cup or so of water or beef broth. After about 7 hours on high heat, it shreds apart super easy.
Add red enchilada sauce, cheese, and green chilies to shredded meat. Put meat mixture in tortillas and roll them up. Place in freezer bag. When ready to cook, arrange in a casserole dish (10 enchiladas fit in a 9×13 pan), pour 1 can of red enchilada sauce over the top and sprinkle with cheese. Bake at 350° for about 35-40 minutes. Serve with spanish rice; garnish with shredded lettuce and sour cream.

Pesto Chicken Penne

Blake and I really liked this!! Easy and yummy!!

Pesto Chicken Penne

Ingredients

8 ounces penne pasta
1 envelope pesto sauce mix
3/4 cup milk
1/4 cup olive or vegtable oil
2 cups cubed cooked chicken
shredded parmesan cheese

Cook the pasta according to package directions. Meanwhile, in a large saucepan, whick together pesto mix, milk, and oil. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Add chicken; heat through. Drain pasta. Add to the sauce and toss to coat. Sprinkle with cheese.
(This made enough for Blake and I. I wish I would've doubled it for left overs.)

Side note: I've decided to do the 30 day shred with Jillian. I did it before getting married, but decided to start it again, and try to do it everyday. Blake was wondering what it was, so I turned it on for him. He was trash talking and saying how easy it would be. He was dripping with sweat (on the carpet) within the first 10 minutes. Love him!



Weenie Roast

Blake and I went camping this weekend; it was really fun! We went to Leavenworth, Washington. It is a little German town. I've been wanting to go camping, and especially have a weenie roast!! A couple weeks ago we bought a tent and air mattress. It was a little too early to go camping in my opinion. No wonder we were the only ones sleeping in tents at our campground. :) Although I froze, I suggest everyone needs to go camping once in a while, maybe when it gets a little warmer. I will tend the kids for you couples that have cute children! :)












Cheesesteak Sandwich and Mothers Day Flowers


These are my Mothers Day Flowers from Treagan and Allie in San Antonio. Thanks so much. They are beautiful.


This is the Cheese Steak Sandwich I made us tonight. Easy.
Buy 1 pound of boneless Steak. Have the meat dept thin slice it for you.
Melt 2 T. butter in a pan when it gets hot add meat and brown.
Halfway through add sliced onions, and green bell peppers ( I didn't do the peppers in Dads)
as much as you would like...
Season with Kosher salt, freshly ground pepper and the recipe calls for hot sauce (optional)
such as Tabasco or Cholula
Spoon meat mixture on open faced Hoagie bun - top with Provolone cheese.
Put under the broiler for 2 minutes or so until toasty and melty.
Serve immediately.

We thought they needed some kind of sauce..... Dad put ketchup on his and I added some mango salsa.

Cinco de Mayo

For Cinco de Mayo I wanted to do something fun for dinner for us so I got some yummy recipes to try out.  These ones were supper yummy and they turned out great! Our best bites is where I found them all from.  Best cookbook ever! You all seriously need to get it! PS I don't know how to put these under a label. . . How do I do this? ha 


Chicken or Steak Fajitas 
1 lb boneless skinless chicken breasts, chicken thighs, or steak
2-3 bell peppers, stem and membranes removed and peppers quartered
1 large onion (any color/variety) sliced into 1/2″ slices
Marinade:
1/4 C fresh lime juice
1/3 C water
2 T vegetable oil
2 cloves garlic, pressed or finely minced
3 t vinegar
2 t soy sauce
1-2 t liquid smoke (You can find this by the bbq sauce at the store)
1 t salt
1/2 t chili powder, or chipotle chili powder
1/2 t cayenne pepper
1/4 t ground black pepper
1/4 t onion powder




Place meat in a zip-top bag or shallow dish.  Place vegetables in another.  In a medium bowl, combine all marinade ingredients and whisk well.  Reserve 3-4 Tablespoons of marinade for later use.  With remaining marinade, add a splash to the vegetables (enough for a light coating) and the remaining to the meat.  Marinate for 4-6 hours and up to overnight.
Preheat bbq grill (my preference it honestly tastes so much better this way! Treag wasnt too happy he had to go out in the 100 degree weather to grill though), indoor grill pan, or large skillet.  If you’re using a grill, place everything on at the same time.  If using a skillet, slice peppers and onions first.  Cook chicken for a few minutes on each side until cooked through and remove from pan.  Cover with foil to keep warm.  Add vegetables and cook until crisp tender.
I got the uncooked four shells at the store! They come in a bag and you heat them up on a pan your self.  They are soo yummy, much better than buying them pre-made in my opinion.

Lime- Cilantro Rice 
I LOVE cilantro LOVE, LOVE, LOVE it! And here in Texas it is everywhere so I'm in heaven. This rice is soo yummy! But you need to serve it right when its done. . . Its not as yummy warmed up. 



1 cup dry white rice, cooked in 2 C water.
2 T real butter
Juice from 1 
large lime. I used about 2 and 1/2 limes. I loved the taste and couldnt get enough of it!
1 small can crushed pineapple, drained.
 (You may want 2 small cans)
½ – ¾ C chopped fresh cilantro
Salt and pepper to taste


Cook rice. As soon as it’s done, toss in the butter and stir to melt. Add lime juice, pineapple, and cilantro. Stir to combine, and then add salt and pepper to taste. 


Mexican Corn on the cob
I don't this I would ever make this if it wasn't Cinco de Mayo because it is so fattening but if you are doing a Mexican meal its pretty good and really fun to have.  I also doubled the chili and cayenne pepper.  I like my food pretty spicy and I didn't feel like it had enough of a kick! And I used light mayo and sour cream and it stilly tasted pretty yummy :) 
4 ears corn
3 T mayo
2 T sour cream
1/4-1/2 t lime zest
1/2 t fresh lime juice
1/4 t cayenne pepper (optional)
1/4 t chili powder
tiny pinch kosher salt
1 C crumbled Cotija Cheese* (use fresh parmesan or queso fresco if you can’t find Cotija)

Mango Pico de Gallo
This is so stinking yummy! But it goes bad within a day so eat it all! Treag wouldn't let me add the onion in this. . . You HAVE too! It needs them for just a little extra kick. We added them in after the pictures were taken. ha 
1 c. small cubes of mango (about 1 medium to large mango)
1/2-1 large jalapeno pepper (1/2 without seeds is a nice, mild-medium heat; go from there)
1/4 c. chopped cilantro
1/4 of a medium red onion, finely chopped
Juice of 1 
lime
2 cloves 
garlic, minced
Kosher or sea salt to taste

Muddy Buddies!

This weekend Jake and I went on a mini road trip and we needed some yummy snacks for the car ride, so I decided to make some Muddy Buddies! (Or some people call them puppy chow!) It is super easy and sooo yummy (and kinda messy! haha).

Ingredients:
9 cups Rice Chex (or corn Chex)
1 Cup semi sweet chocolate chips
1/2 cup peanut butter
1/4 cup butter/margarine
1 tsp. vanilla
1 1/2 cup Powdered Sugar


Directions:
Into a large bowl measure cereal and set aside!


2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter, and butter uncovered on High for 1 minute. Stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in Vanilla.


Pour mixture over cereal, stirring until evenly coated! 


Pour into 2 gallon resealable food storage plastic bag. 
(or improvise by separating it into smaller bags! haha)
Add powdered sugar. Seal bag. Shake until well coated!
Spread on waxed paper to cool. 
(I also skipped the waxed paper part.. or just didn't read it. I just put the bags in the refrigerator!)
